Refreshing Shrimp Ceviche Recipe

Ingredients:

  • 1 pound of fresh shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 3-4 limes, juiced
  • 2 lemons, juiced
  • Salt and pepper to taste
  • 1 jalapeño, seeded and finely chopped (optional for some heat)

Instructions:

1. Prepare the Shrimp:

  • Bring a pot of water to a boil and add a pinch of salt.
  • Add the shrimp and cook for 2-3 minutes or until they turn pink and opaque.
